Vichyssoise: Leek and Potato Soup

You don't always need to start the new year off with a BANG. This soup's subtle yet delightful flavors cling to your taste buds. This flavorsome dish can be a little time consuming when slowly chopping the ingredients, but they yield a big return and don't skimp on satisfying richness.

I love the french word for this soup: Vichyssoise. vēSHēˈswäz luxuriously rolls off the tongue, but the simple ingredients flirt with mockery. The name is almost a misnomer. For a soup that sounds deserving of respect, it's ALMOST absurd that it's comprised of rudimentary pantry items.

With all this being said, I hope you will be inspired to try the soup and try to pronounce it's french name.
