Summertime Edamame Salad
My sweet sister-in-law, made this salad for one family night dinner and upon tasting my first bite of this vibrant salad, I asked her what Half Baked Harvest recipe it was - she was happy to share that SHE created this verdant green salad bursting with vitamins.
It's the perfect accompaniment to whatever you're grilling this summer. When it's too hot out to eat anything but hungry bellies are waiting, this can be your new go to for something satisfying and healthy to feed your family.

Hannah's Summertime Edamame Salad
Ingredients
3-4 ripe avocados
2 cucumbers, quartered and chopped
1 bag of edamame, cooked according to package
half cup of diced red onion (optional)
cup of cherry tomatoes halved (optional)
1/2 cup parsley
1 lemon
1 lime
salt and pepper as desired
Recipe:
Cook edamame, let cool and then place in mixing bowl.
Add parsley, cucumbers, avocados, tomatoes, red onion to same bowl and toss.
Dress the salad with citrus from lemon and lime and salt and pepper as your taste buds wish.
