Thai Chicken Wraps with Peanut Sauce

I'm always in the mood for Thai food, so when I found this recipe on Pinterest I was happy to find a way to include it in our weeknight dinner lineup. My husband, Griffin, enjoys any kind of sandwich or wrap so I knew this would make him happy once he saw it on the menu.


Quick, delicious and nutritious food always gets an A+ in my book. Hopefully you can add this to your recipe book too for a stress free dinner night, or lunch if you've got extra time working from home!



Thai Chicken Wraps with Peanut Sauce


Ingredients:

  • 2 chicken breasts

  • Wraps of choice

  • 1 cup of slice carrots

  • 3 cups of cabbage

  • 1/2 cup roasted peanuts

  • 1/4 cup honey

  • 1/4 cup olive oil

  • 1/4 cup peanut butter

  • 3 tablespoons of white rice vinegar

  • 2 tablespoons of chili garlic sauce

  • 1 tablespoon of sesame oil

  • 1 tablespoon of soy sauce or coconut aminos

  • Salt and pepper

  • 1 Lime


Instructions:

  1. Season 2 thick chicken breasts and cook about 5 minutes on each side.

  2. Mix together 1 cup of sliced carrots and 3 cups of cabbage in a large mixing bowl.

  3. Add 1/2 cup of roasted peanuts.

  4. For the peanut sauce, whisk together the following in a measuring cup:

1/4 cup honey

1/4 cup olive oil

1/4 cup peanut butter

3 tablespoons of white rice vinegar

2 tablespoons of chili garlic sauce

1 tablespoon of sesame oil

1 tablespoon of lime juice

1 tablespoon of soy sauce or coconut aminos

Pinch of salt and pepper


5. Pour half of peanut sauce into carrot and cabbage mix and toss well.

6. Cut chicken into strips.

7. Heat a wrap in the microwave for 10 seconds.

8. Place a little bit of cabbage mix and chicken in the wrap and roll up

Enjoy wrap and dip into the remaining peanut sauce!
